1 tbsp olive oil
2 garlic cloves
7oz fresh peas (with or without pods)
150ml chicken stock
salt, to taste
Peel and chop the onion and garlic. Heat the oil in a large saucepan,
add the onion and garlic and sauté for 3 minutes then add the
peas. Pour the chicken stock into the pan and leave the soup to simmer
for 5 minutes. Transfer the soup to a food processor and whizz until
smooth. Pour the soup back into the saucepan before adding the cream,
salt and Tabasco. Simmer for a further 2 minutes then remove from
the heat. Serve immediately.
